Pollination Variant Non-Astringent. These are the cultivars that becomes non-astringent while still firm ripe when properly pollinated, otherwise, if parthenocarpic, or the fruit sectors that do not have seeds remain astringent and must be soft ripe before becoming edible.

Pollination Variant Astringent. These persimmons would change in taste or color when they are pollinated but still remain astringent. Often the taste quality is impoved upon pollination but still needed to be soft ripe before consumed.
